I splurged the other day when we were at the grocery store and brought home a lug of peaches. It's a little frightening to spend $20 on fruit, but I have plenty of recipes in mind for these furry treats. I feel like "Bubba" from Forrest Gump when I spout off my peach recipes.
Our first endeavor was peach pie.
This is an easy pie and only requires one crust. It's fast and simple. These are the best kinds of pie- we didn't even let it cool completely before delving into it. I was out the day they taught "patience is a virtue".
Here's what you need:
- 1 cup sugar
- 1/2 cup flour
- 1/4 cup butter
- 1/4 teaspoon nutmeg
- 4-6 large peaches
- 1/4 cup cold water

Sift dry ingredients together including the sugar, flour and nutmeg. Cut in butter.
Sprinkle half the crumble mixture over the bottom of your pie crust.
Arrange sliced peaches over the crumb mixture and sprinkle with water.
Add the rest of the crumble mixture.
Bake at 425 degrees for 15 minutes, reduce heat to 350 degree and bake for 30 - 40 minutes longer. Cool and enjoy.
The children loved this pie and asked for seconds. Now that we have our bellies full of pie, we are going to focus on freezing spiced peaches and making jam.
