In our house, chocolate is our number one favorite treat.
The tart lemon has been fighting it's way up from the number two spot for years.
This heat wave made us crave a refreshing treat so my family concocted a tart dessert from the almighty lemon. This recipe is a favorite of my husband and the boys fall in line for seconds.
These sweet bars might be a worthy contender for overthrowing our reigning Cocoa champion.
Here's what you need:
1/2 cup powdered sugar
2 cups flour
1/2 teaspoon salt
1 cup butter or margarine
2 cups sugar
4 eggs, slightly beaten
4 Tablespoons flour
6 Tablespoons juice
Here's what you do:
Mix together powdered sugar, salt, 2 cups flour, and margarine. Pat mixture into a 9X13 inch pan.
Bake 15 minutes at 350 degrees.
Mix sugar, eggs, flour and lemon juice.
Spread over crust.
Return to oven and bake 20 minutes at 350 degrees. When removed from the oven, run a knife around the sides of the pan.
Let cool and shake powdered sugar over the tops. Refrigerate after baking.
