Jelly Bean Nests
Today we were scrambling to come up with some bake sale ideas for our oldest son to take to school for band. I was out of butter, cupcake wrappers, marshmallows, and all that goodness that makes a treat fun- at least for a 12 year old. I stressed and stewed. Finally, I remembered that I had a bag of jelly beans stashed in the closet. Woohoo! Nest treats were now on the menu.
My boys love no bake chocolate cookies. They call them swamp cookies, dinosaur droppings, cow pie cookies, etc. Boys can make up some interesting names for something you are going to eat... So naturally, I had to rain on their "gross out" parade and make pretty dainty cookies for them instead.
Whip up a quick batch to celebrate spring- if it ever decides to come back! Let the kids count the cups of oatmeal, unwrap the butter, and put in their "eggs". You will put smiles on your little ones faces and bring back memories for the older members of the family.
1/2 cup butter
2 cups sugar
1/2 cup milk
1/4 cup cocoa powder
1 tsp. vanilla- or almond
3 cups oatmeal
1 cup peanut butter
Boil butter, sugar, milk, cocoa, and vanilla for 1 minute. Pour oats and peanut butter over mix. Stir together and drop by teaspoons on wax paper to cool. Quickly, push a few jelly beans into the center to resemble eggs in a nest. Let set.
