Got Strawberries? Double Chocolate Covered Strawberry Cake

Spring is the season for a lot of fresh food and strawberries are readily available in the grocery store.  My garden won't produce the red berries until June, but we get an early taste from ones provided in the store.  I recently bought 8 pounds of strawberries to nibble on and freeze for later.  On a snowy April day, strawberries are a real treat.

I bet you are thinking I am crazy.

SO, now I have a plethora of spring goodness.  What to do?

I am planning on making a strawberry pie and indulging in strawberry shortcake.  I might even crack out the canning equipment and whip up some jam.  We'll see.  I am bogged down with work and chasing my boys, so the jam making might be left up to Smuckers. 

I did play around with strawberries to dress up a plain chocolate 9x13 cake.  I called it "double chocolate covered strawberry" cake. 

Chocolate + Strawberries + Cake= Delicious

Here's what you need:
  • prepared chocolate cake (use your recipe, box, or bought)
  • white frosting (make your own, buy a container, etc.)
  • sliced strawberries
  • 1 cup milk chocolate chips or 1 cup semi-sweet chocolate chips 
  • 1 tablespoon butter
Frost your chocolate cake with the white frosting.   Add your sliced strawberries to the top.  In a microwave safe dish, melt the chocolate chips with butter.  Monitor it closely.  When it is smooth, drizzle over the strawberries and refrigerate.  When the chocolate is set, serve. 
It's my son's birthday this weekend (AND it wasn't snowing, it was steamy and storming 9 years ago when he was born!).  I am getting desperate in the cake department.   Do you have any tips to dress up a plain cake?
