The Easiest Pumpkin Muffins You Will Ever Make...

I am stuck in a snack rut.  I have exhausted all the fruit/cheese combos, crackers and peanut butter match-ups, and I don't want to think about brownies...  What to do?

I decided to crack out my favorite old church cookbook and flip through the pages.  I was desperate.


I stumbled upon an old muffin recipe that I had submitted, because my mother insisted I contribute.  I had forgotten how good and simple it is.  Honestly, you can't get much simpler.  I don't recall where I first found this recipe, I think I might have gotten it from an old neighbor. 

You must try it. 

I whipped up a batch and the kids devoured them before the sun set.  I always add some chocolate chips to the mix, because in my mind warm pumpkin bread tastes better with chocolate sprinkled in. 


Easy Pumpkin Muffins

1 (18.25 oz.) box spice cake mix  *
1 (15 oz.) can pumpkin

Mix the cake mix and pumpkin together and spoon into prepared cupcake wrappers or pans.  Bake at 350 degrees for 15-18 minutes.  Test with a toothpick and they are done when poked and nothing sticks to the pick.  You can frost them with a cream cheese frosting.  Makes about 24 muffins.

*  I rarely have a spice cake mix on hand, so I substitute yellow or white cake mixes.  To give it a spiced taste, I just add cinnamon, cloves, and nutmeg.  We also omit the frosting and add 1 cup of chocolate chips instead.


I know you are probably laughing at this simple recipe.  It really does work!  The hardest part of baking them is keeping the kids from sticking their noses in the bowl to watch me stir.
